Shepherds Pie Recipe

I know Dis is full of Fabulous cooks. I need a Shepherds Pie recipe. I have never done one of these because my youngest has a total milk and dairy intolerance. However, he spent the weekend with a friend and his mom made one and left off the mashed potatoes and cheese on a corner, he LOVED it.

My other kids love it, and I need something different so I thought I would give this a try. Instead of trial and error I came to the Dis for recipes, I have gotten really great ones here in the past. :thumbsup2

Can you make the mashed potatoes with soy milk?

Basically, a Shepherd's Pie without the mashed potatoes is just a lamb or beef stew. :confused3

I probably could. My beef stew is a tomato based stew and I have never seen it in a restaurant with a tomato sauce, so I assumed that is was different. It isn't something I would care for, so I have never tried it. I don't like cheese, except on pizza.
 
I make my beef or lamb stews with beef broth, no tomatoes. I usually eyeball what I put in, so I don't have a measurements, or I'd give you the recipe.

I think you can make the Shepherd's pie without cheese. :)

Thanks. I was kind of wondering what type of gravy/broth that people put in to the meat and veggie mixture. The rest I can handle. I usually just eyeball stuff to, drives people crazy when I can't tell them how much of something. lol
 
Google rachael ray shepards pie - my kids love this. I use ground turkey because some of my kids don't eat beef.

Oh good. Then what I do is cut up some beef or lamb into cubes, brown it a little in oil & garlic & onions. Then I pour in a can or two of beef broth, I some spices and a bay leaf. (I tend to play around with those. Someone else can be more helpful there.) Let it simmer for a while and then add a bag of frozen mixed veggies. Some people add cubes of potatoes. But, if you add mashed on top, leave out the potatoes to the stew. Maybe add some Worcestershire sauce to add some undertones.

To thicken the broth, when the stew is nearly done, I turn up the fire to get the stew boiling. I make a slurry of cornstarch & cold water, till it's the consistency of heavy cream. I slowly pour the cornstarch in. Maybe start with about a quarter cup of it, while stirring vigorously - so the cornstarch doesn't get clumpy. It will take several seconds to thicken. If it needs more cornstarch add a little at a time, or it will over-thicken suddenly. Once it's the thickness you want, turn down the heat and cook it for a couple minutes more so the cornstarch has a chance to cook and incorporate in and doesn't have a pasty flavor.

Alternately you can thicken the sauce with flour. I don't know how to do that as I usually use cornstarch.

We use this recipe, too, and have made it with venison. It was delicious.

We love Alton Brown's shepherd's pie recipe. I replace the ground lamb with ground beef and the chicken broth with beef broth, but follow everything else. :)
 
Google weight watchers shepards pie. Its yummy! My kids love it. I think it says to use ground turkey, I use ground beef. It has rosemary in it. I might make it today too!
 
I never put milk in my shepherd's pie, not even in the mashed potatoes. It comes out great.

Yep, I've often made mashed potatoess without milk. I do use butter but you could totally use margerine the same way. I add peas and corn only between the layers of meat and potatoes-no cheese. I brush the top with an egg wash so it browns crunchy. Onions and garlic sauteed in olive oil then meat browned(really brown till the oil can be seen) then peas, spread the taters and bake. Salt and pepper. I've also baked garlic and added it to the potatoes.
 
I love Shepard's pie and try to come up with variations to make it different...I have mixed a box of cornbread mix and put it on top in lieu of mashed potatoes and it comes out real good.
 
I've also done Shepherd's Pie using mashed cauliflower as the "potatoes", so that's an option. If you boil down the cauliflower so its really soft and then mash it with garlic, a little olive oil, and some chicken broth, you can probably get a nice consistency without using milk or butter.

I use an envelope of Coleman's Shepard Pie mix (like a gravy/seasonings packet) with ground beef to make my Shepard's Pie with. I use the recipe on the back of the envelope. It also has the onion, carrots, peas and mashed potatoes. I sometimes add sliced mushrooms.
It always comes out delicious and is one of my family's favorites. I make it for company too with fresh made scones, salad.
It's sometimes hard to find the Coleman's packets, they are British. I find them at Meijer in the International aisle and also at World Market in their food section.
 
If Im not mistaken Shepherds pie is with Lamb and Cottage pie is with beef.

When I make mine I make it as a thick stew minus the tomato base broth. I will make a beef broth for it.
