Shelf Life of Schoolbread?

Greetings!

DH & I are hitting Epcot on Tuesday, 5/1. My mother has never had schoolbread and doesn't care for Epcot, so it's doubtful she'll ever have some fresh. We are meeting her for lunch on Weds, 5/2 at Universal. She's half Norwegian, and I'd love for her to try it.

The plan for Tuesday is Epcot during the day, then taking the monorail over to GF for dinner, then driving back to our timeshare. The pastry would go quite a while without refrigeration, even if we just picked some up on our way out. Once we're back at the timeshare, I'll have access to a fridge, as well as a cooler the next morning.

I'd probably like to buy a few for our friends at the timeshare, too.

Thoughts?

schoolbread has a custard inside and would need refrigeration (especially in warm weather, in transit) - don't think it would "hold up"

PlutoLuvr- Come to Epcot prepared!! Bring your cooler full of ice (leave it in your trunk), then it would just need to make it a few minutes to the parking lot. This would be the safest way to transport for your friends and family. Can't wait to try some in Sept!!!

I've also seen a recipe floating around the boards for school bread. Someone on here made it & said it was very authentic to what you get at the Norway bakery in Epcot. If you are up for rolling up your sleeves, you could make some fresh when you get home.

Maybe I'm imagining things, but I don't think they keep it refrigerated at the bakery, do they? The filling is similar to the filling in a Boston Creme Pie doughnut, which aren't refrigerated either. I've never noticed it being particularly cold when I eat one. I don't imagine it would be good to leave one in a hot car, but if you bought some late in the day, I would think they would be fine without going into a cooler.

One thing about transporting them, they have a coating similar to a glazed doughnut under the coconut. If sealed in a baggie or airtight container, the coating gets sticky. Just so you know to have some hand wipes handy for after eating.

The School Bread custard contains cooked milk and (tempered) egg yolks. I don't know if either or both would cause it to spoil - but since the OP is staying in a condo, one option might be to bring one of those reusable freezer blocks and a small collapsible cooler.

I believe those cases are refrigerated.......or maybe just air cooled as I would not think that something like that would hold up otherwise in Florida weather..

I just don't remember the schoolbread being cold when I ate it, and I've had it several different times. It was room temperature. I figured the cases were more for keeping the dust and critters away.

In some bakeries, the cases dont have to be refrigerated. The air conditioning of the shop (and stores are quite cold here in Miami) seems to keep everything just fine. That doesnt mean I would buy glazed pastries and cary them around w me for a few hours Glaze gets so messy, so fast
