Simplicity still has the adult Snow costume pattern available in stores, though you can't get it on the website. Personally, I don't like making Snow, b/c the collar, the slashed sleeves, and the endless piping are a bit of a pain. It's rather garish-looking, too, IMO, unless it's made of velvet. The Aurora dress is much prettier, really.
As for Shang, there are huge numbers of websites devoted to the design and construction of Jedi costumes, and the style is very similar. Just do a google search for "Jedi tunic pattern" and you'll get all sorts of pattern references and scale layout drawings.

Another possibility is to find a pattern that isn't specifically a costume that looks like the character you want to be and just use the right colors, fabrics, trim, etc. Often, the regular patterns are a better designed than costumes as they are intended for making clothes worn again and again while costumes are generally a once or twice worn item. I found a really cute dress pattern for my DD's "princess" gown in the bridal section of the pattern book. That section also has more detailing than many costumes, again because the costumes are usually a get done, wear it and make another next year. The bridal section patterns are also more "once worn" items but intended for special occasions so most sewers are willing to put more time into trims and other finishing touches than they would on a Halloween costume.
