Glad to see you all had great dinners yesterday - we did have ham but just rice and corn for sides and a berry pie. We are in the middle of a huge spring cleaning project with Drew's Eagle ceremony this coming weekend so we stopped long enough to eat and got right back at it. I hope that either the snow stays or leaves early enough so we can get the yard picked up.

David is an Eagle Scout as well as being the scoutmaster for the troop. Our oldest is an Eagle too. I firmly believe that David will be involved in scouting even after our own are finished (and since Drew will be 18 in June that is soon) - he really enjoys it. They all started in Cubs (I was even a cubmaster) but once they got to Boy Scouts, I let David take over.
I remember telling Cub Scouts that 1 in every 100 boys that started in Scouts would become Eagle Scouts but I think that has improved to 2 or 3 in every 100 now. It takes time and with school, sports, jobs and girls that time becomes scarce. Plus, I am not really sure it is a very "cool" thing these days.
But, it makes me proud none the less.
Nothing special Bob. Here we had green beans cooked with a smoked ham hock and cayenne pepper. Skillet fried corn, potato salad, pea salad, fruit salad, glazed ham, brown and serve rolls. Wife made a banana pudding from scratch, I made two of my mom's chocolate fudge pies, brownies, sweet tea and candied sweet potatoes with marshmallows on top. Blood sugar is shot to hades, but Easter on comes once a year.... Mike
Will have to try them that way. Just for the record though, I don't care for deviled eggs. Lee and my kids like them and I learned to make them from my mom, so I am the deviled egg chef.... Bob my Nanny makes the best deviled eggs ever. She claims her secret is finely minced onions and celery seed. I craved them all day yesterday.........
Bob it is my mom's recipe and makes two 9 inch pies.
Mamas Chocolate Fudge Pies
Preheat oven to 350 °
In a pan, melt 1-3/4 sticks of butter
Combine 6 heaping tablespoons of Cocoa
Melt butter over low heat add cocoa to blend
Add 2-1/2 cups of sugar
Add 4 large eggs beaten
1 tablespoon of flour
1/2 tsp of salt
1 tsp of vanilla
Pour mixture into 2- 9 inch pie shells
Bake at 350 for 40-45 minutes until tops crack.
Allow pies to cool before cutting. Can be eaten as is, or with vanilla ice cream on top or whipped cream.
