The quote you quoted was talking about the winery they just added, and its greyed out because you can't book it online...have to go through a form.
On most of the cruises I have done there is at least 1 or 2 excursions or more that are full before first timers, but anytime there was one booked up when I tried to book it, I just keep checking and eventually got in. There are always cancellations.
With only one truly full, since the NIght is not offered on our cruise, that is not bad at all and it probably did not have many slots available for it. and with Palo still so open its def an odd cruise and not that full.
My first thought was that these California coast cruises mustnt be popular if PALO is open at the 75 day mark - and even all the excursions (ex Alcatraz) being open also. It might be a quiet cruise
