Scrapple vs head cheese

There may be different types of scrapple - I thought it was a cornmeal-based food with bits of meat mixed in?
 
The kind of head cheese I have had was either a type of cold cut, or sold in a type of mold--it was pieces of meat from the head of the animal, held together in a thick gelatin. Not strong tasting at all, very mild.
 

Yes, scrapple is cornmeal based & cooked before eaten and head cheese is gelatin based and eaten cold.

I had to stop eating scrapple after I read the ingredients and saw "snout."
 
Then stick with the head cheese. It's definitely made of just the head. In traditional recipes anyway.

I won't tell you how it used to be made though. As a child my parents raised pigs and sold pigs and since we raised 'em we ate 'em. Pork was a major staple in my diet as a child. My dad did all the slaughtering and butchering himself. Despite this I will eat all parts of the pig - pretty much - but not the organs and not head cheese. All I can say is my dad made it one time and I will never eat it. The process is just revolting. And despite knowing what goes into scrapple I will eat that (the first four letters are very descriptive of what's in it).

Oh, and if you're really worried about the other end. Absolutely avoid any traditionally made sausage. Cause that casing...
 
Headcheese in a sandwich with a slice of swiss cheese is just like a ham sandwich to me. Only had it once. My mom's cousin lives on a farm and they make their own.
 
SCRAPple.... the scraps of a pig that include almost everything but the eyes. bones, and hooves. It gets cooked down and seasoned, then mixed with cornmeal. It is formed into a loaf then sliced - usually 1/4 to 1/2" think. It sometimes is dredged in flour and fried in oil. Sometimes it is just sliced and heated in a pan until crispy.

Usually a breakfast food, most known in the Philadelphia area, it is most frequently a side dish for eggs. Many folks like it with ketchup. ( I do ) And some folks eat it with syrup ( I don't ).

Surprisingly, when not fried in oil, it actually isn't all that bad for you because corn meal makes up a large portion of each serving.

And yes, I absolutely LOVE, LOVE, LOVE, scrapple. I would eat it before I would eat steak, any day of the week.
