This sounds like what they really offer is a wedge salad, which is perfectly fine if that's what's advertised. But typically, at least in my experience, a beef and blue is a larger salad of mixed greens, flank or skirt steak and real crumbled blue cheese with the dressing varying by restaurant. If I ordered a beef and blue and got a wedge salad I would be disappointed. Not that I don't like them but it's a totally different animal. But if the menu description is accurate then I guess it's just maybe the title that's confusing?

Here's a picture I found online from a trip report. This one looks fairly substantial to me and I'd be satisfied with it since it matches the description. Wedge salads generally don't have a bunch of extra veggies like carrots, cucumber, etc. I'd prefer it had blue cheese crumbles, but I don't expect it given this is Sci-Fi at Disney, not a fine dining location.
