Scallop Recipe?

Can I please have your ideas for what to do with Scallops? I have 2 1/2 pounds of them and I have no idea how to cook them...DH likes them Deep Fried, so if someone has a recipe for the coating I would appreciate it...I like them any old way, but no recipe on how to cook them...Any ideas??

My mother used to "bread & deep fry" oysters & scallops. As odd as it sounds, I'm fairly certain that all she did was dredge with flour (maybe seasoned w/salt & pepper), dip them in beaten egg & coat with bread crumbs. (She always used bought ones - like Progresso.) I just checked & that's about what the old Betty Crocker cookbook says. Her time table says to fry 12 oz for 3 - 4 min.

Before they got too expensive, we used to have bay scallops (the small ones) a couple times a month. I just melted butter in a pan, added the 'Lea & Perrins Worcestershire for Chicken' - blended with white wine & herbs. Then I just cooked the scallops until they turned white.

BTW - That version of Lea & Perrins stuff is really good with chicken done the same way.

I found this one on allrecipies and I really like it. I use bowtie pasta instead of fettucine, just because that's what I had at the time I first tried it. And it's incredibly easy to make, just chop and throw in the pan.

Pasta with Scallops, Zucchini, and Tomatoes

1 pound dry fettucine pasta
1/4 cup olive oil
3 cloves garlic, minced
2 zucchinis, diced
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 cup chopped fresh basil
4 roma (plum) tomatoes, chopped
1 pound bay scallops
2 tablespoons grated Parmesan cheese

In a large pot with boiling salted water cook pasta until al dente. Drain.

Meanwhile, in a large skillet heat oil, add garlic and cook until tender.

Add the zucchini, salt, red pepper flakes, dried basil (if using) and saute for 10 minutes.

Add chopped tomatoes, bay scallops, and fresh basil (if using) and simmer for 5 minutes, or until scallops are opaque.

Pour sauce over cooked pasta and serve with grated Parmesan cheese.

4-6 servings
 
Thanks for the replies...I think I just might bread them and deep fry them for DH and then just cook some over pasta for me....I really don't like to eat deep fried stuff! LOL

I can't believe I forgot about stir-fry! Back in the spring, DH brought me some scallops & that's what we did. I had a bunch of fresh veggies & used some fake "crab", scallops & salad shrimp in a stir-fry. That time I used one of the Rice Road sauces - it was wonderful!

Now you've made me hungry! ;)
