You may park your own vehicle at a resort if you hold an advance dining reservation at a sit-down restaurant at the resort, I can't imagine a problem with Uber dropping you off.Would plan to Uber in if possible. Would be during a slower time period.
YMMV. We use uber/lyft a lot to go resort-to-resort and, many times, the security guard still asks if we have a resort or dining reservation. Granted, I have not tried it at AKL, but have been asked at Poly, CR and BC.
As you probably know but others may not, that's because those three resorts are close to a park--MK for Poly and CR, EP for BC. Avoiding the huge MK lot is a prime motivator for parking at the monorail resorts as is being able to slip in the IG instead of trekking across the EP lot to the main gate.
Disney has become much more strict about parking at such resorts, even to the gate guard demanding those not having a reservation to u-turn and leave. We've seen that happen more than a couple times at the GF on each recent trip.
As small as the VGF1 lot is and often full when there's a wedding at the chapel, I'm all for the guards doing this.

While AKL is not within walking distance of a park, I don't know how strict the security guards are regarding parking without a reservation. I've gotten out of a car and walked past guards before. They restrict cars, not people. Of course, the AKL gates are a real hike, and that's not really possible there. Ok. I won't.I'm local and we occasionally eat at Boma or Sanaa. Every single time I've had to tell or show them my ADR and show them an ID. I wouldn't go out of my way to eat at counter service there, though so I haven't tried that.
