I think that is a generally true, but Salt and Straw likes to test the boundaries of what is acceptable. I suppose they could have made the ice cream with Parkerhouse rolls or Cornbread stuffing work, but I didn't like how either turned out.
I especially felt that the cornbread stuffing was poorly executed, as the chunks in my scoop were hard and gritty, which is not the correct texture for properly prepared stuffing.
They likely just mixed in packaged dry stuffing, hoping that the ice cream base would soften it. Joke's on them. There is too much fat in ice cream to do that.
