The tomatoes are starting to ripen in the garden and every year I try to make salsa but it just doesn't turn out. Tends to be watery and bland. Does anyone have any easy and taste salsa recipes they'd like to share? Thanks.
 
Here is an easy recipe that I have. You could sub your fresh tomatoes for the ones in a can.

1 28 oz can of stewed tomatoes (drained)
2 10 oz cans diced tomatoes with green chilies (1 can drained)
1 tap garlic salt or powder
2 tsp salt
optional: 1 tsp cilantro

Blend in blender. Ready to serve. :D
 
Salsa is one of those "whatever you like" recipes. Here is a fresh salsa recipe that you might enjoy:

Salsa Fresca

3 red-ripe tomatoes -- cored and chopped
1 Large white onion -- chopped
3 garlic bloves -- chopped
4 jalapeno or serrano chiles -- stemmed and chopped (you can leave or remove the seeds depending on your desired level of heat)
1/4 Cup chopped cilantro or flat-leaf parsley
1 lime -- juiced
1 Teaspoon kosher salt
6 grinds black pepper
1 Teaspoon sugar if the tomatoes are acidic (optional)

Combine the tomatoes, onion, garlic, chiles, cilantro, lime juice, salt, and pepper in a bowl. Mix well. Taste and add the optional sugar if necessary. Let the mixture rest for 30 minutes for the flavors to blend. Taste for seasoning and serve at room temperature.
 
Here's another one. This one isn't the traditional Salsa, but my family enjoys it.

Black Bean Salsa

2 cans black beans, rinsed and drained
2 to 3 large tomatoes, chopped
2 to 3 green onions, chopped
2 to 3 garlic cloves, crushed and minced
2 to 3 jalapeno peppers, chopped finely
2 tablespoons cilantro, minced (dried or fresh)
2 tablespoons vegetable oil
garlic salt, to taste
white pepper, to taste

Combine all ingredients in a bowl.
 

Mmmmmmm, I really love salsa and black beans, so I'm going to for sure give that one a try! My in-laws have a really tasty salsa recipe that they call Texas Trash. I will get the recipe and post it later. I've made it and it's super easy. I know it uses fresh tomatoes, green onions (scallions), black olives, olive oil, etc.
