I love salmon. This is the one fish that DH tolerates, but does not really enjoy. I usually make it for myself when he is working nights on the weekends. Following is my favorite marinade - do you have any good salmon recipes to share?????

Citrus glazed salmon (makes 4 servings)

4 salmon filets or steaks
zest of 1 orange
1/4 cup orange juice
1/4 cup lime juice
1 Tbsp. raspberry vinegar
1 tsp. olive oil
1 Tbsp. fresh chopped tarragon
salt and pepper

Mix all the above ingredients, marinate for at least 45 minutes, and grill until done!

I usually cut my fish into 4 portions and freeze it in the marinade in individual ziplock bags to cook for myself. Defrost, grill, and a delicious meal for me!

Luckily my family likes fish and I make Salmon on the grill (all year round).

Grilled Salmon

Basting sauce: 1/2 stick margarine, melted
2 tsp lemon juice
1 tsp prepared mustard (I use Guldens)
1/2 tsp salt

Cut a salmon filet into pieces (easier to handle) and check for stray bones. Lay skin side down on an oiled grill screen. Baste and grill 4 " from Med coals for 6 - 8 min. Turn and remove skin, baste again and cook another 6 - 8 min or until flaky.

I use about 1 1/2 lbs filet for my family of 4 small eaters.

Made this last night for relatives who never had salmon and in general do not like fish. They liked it and one of kids even had seconds!
