Our sailing party is 6 adults. Is it better to have one person register all 6 people at once by one person or let each person register themselves?
 
Anyone age 18+ has to create their own account. Even if one person registers all of the travelers, they will need to create 6 accounts. Part of the process is agreeing to a legal agreement, so it may make sense to have each adult do their own.
It does it matter if person one does it on day 33 then person 2 does it 2 days later etc?
 
Just do it for everyone and be done with it. I personally would not trust anyone else to do it.

Email, website, download it when done entering info, or send it to your apple/google wallet (its Google Pay app on Android).

I would if I were you print out everyones information for them and provide to them on embarkation day. If for some reason you are not meeting them then just email it directly to them to print.

No clue used different emails for the two of us.

I think it's different emails for every adult. Our oldest (an adult) tried to use our email so we could consolidate all the info, but the site made her use a different one.
 
Each adult needs to register and upload their information independently (names, DOBs, emails and passwords) but once that's completed everyone on the reservation (if you share a reservation) is visible in everyone's accounts. For instance, I can see my mom's safe passage status and info upload dates in my account and she can see my info in hers because we're automatically linked due to being on the same cruise reservation.

No, the email address is used as the login for each account so it needs to be unique. If you happen to use Gmail there is a way to create additional addresses that will appear unique but still come to your main inbox.
