Runny Egg Yolks

^ That reminds me of something. My neighbor kept ducks. She offered me fresh duck eggs on several occasions. Truth was that we keep a lot of eggs on hand so I thanked her but said no thanks. Unspoken truth was that I wasn’t sure we could eat them. 😳 What would you guys have done? (PS I am a city girl and have never had anything but a store bought egg! I know that might sound funny to many of you!)


We had ducks for a couple years and regularly ate their eggs, no problem. Duck eggs are also superior for baking, I found. There was something very satisfying about using eggs from our own ducks that foraged on our own property.

Supermarket eggs are mostly crap but we don't have ducks anymore.
 
I *LOVE* eggs. Sunny side up, over easy, hard boiled, scrambled, doesn't matter, give me eggs.

My *FAVORITE* way to eat them though is over easy (runny yolk), on top of french toast, then either with maple syrup or fruit (prefer cherries, but also like peaches and apples). Add some bacon strips... YUM! For those Cracker Barrell Fans... Mama's French Toast Breakfast. Unfortunately I'm not allowed to have that any more.

yum... love runny yolks. Over easy.. poached... and also scrambled with cheese. But I agree.... Like the others said ... whites must be cooked. I have my own chickens, so I know my eggs are fresh and the conditions they come from, .... sometimes still warm from the chicken fresh lol
