No. Everyone is offered the same set of menus over the course of a cruise.
And pretty much the same set of menus from week to week. It changes when you add or subtract # of nights or throw in a holiday / do a special itinerary.
On a standard 7-night cruise, for 3 nights, this set of menus is offered:

Lobster is an item on the Captain’s Gala Dinner menu. It will not be a formal night for everyone.
And the Pirate Menu comes between the two sets of menus or can be used whenever Pirate Night fireworks and party are presented.
If you get into odd itineraries, they have a whole bunch of menus they pull out. On those cruises, everyone eats from a single menu for one night only. But everyone gets the namesake menu in each of the restaurants.
