I think it's all in the parent's presentation--I don't use the word "scary", I don't lie (Yes, it goes really fast!), and I interact with them as much as possible during the ride (Look! Here comes another hill!)
DS 6 was a roller coaster fiend before my grandma started getting into his head with her stories about how scared she is of roller coasters -- now it takes a lot of coaxing to get him on anything. For DD 3 (who escaped Grandma's stories thanks to a firm discussion) anything goes--she blows raspberries as we go by the Yeti on Matterhorn
