roasting cashew nuts

So....does anyone know how to roast your own cashew nuts? I'm thinking of just putting them on a cookie sheet, turning the oven hot, maybe 400, sprinkle with a lot of salt and bake them. For how long? Anyone have any ideas? I bought a big bag of cashews and they are unsalted, unroasted and very icky!

We did this once. We put oil in a large wok with the cashews and then salt. Tossed them around for awhile til they turned that golden color. They came out great. BUT, I remember the whole house smelled of fried oil for days.

After they were cooked we drained them on paper towels and salted them alittle more to our liking.
 
How about tossing them in oil and salt and putting in the oven (like doing oven chips or potato wedges)? Try with a few first, but it would keep the oil smell (and fat content!) down :thumbsup2
 
I do cinnamon coated pecans and they're always a hit. I've given them as gifts in a cute jar or canning jar. If you want the recipe let me know.
