I'm not a cook but diced some golden potatoes tonight mixed them with some olive oil and salt, garlic powder and basil. Are there any other spices I can add? It's kinda plain tasting but maybe that's because I'm used to fast food potatoes?
Rosemary is good. If you have a packet of french onion soup mix, you can use about half with a little bit of water mixed in to rehydrate the onions. Mostly the roasted potatoes I am familiar with have more salt than you'd think.
I agree Lipton Onion soup mix and/or lots of freshly ground pepper. If you're using the onion soup mix don't add any extra salt. It's pretty salty as it is.
This is one of my families favorites. I serve it with ranch salad dressing as a dipping sauce. Even better if you have bacon ranch.
I second the rosemary. You can use dried and it will be fine. If you want to add fresh, add it at the end as fresh herbs tend to burn pretty quickly and lose their taste, so you end up wasting money.
Also, fresh garlic is probably a better choice. You can throw it in whole and not even bother chopping it up (you'll want to peel it though ). A chopped up onion will really add a lot of flavor to roasted potatoes.
Once you master potatoes, there are so many vegetables that taste really good this way, like asparagus (15 minutes in a 425 oven tossed with a bit of olive oil and sea salt).
I have a bottle of the mixed Italian spices that you can add to olive oil for dipping bread into. I generally toss the potatoes in olive oil and then that spice mixture. They always come out great.
I buy the packets of ranch dressing mix and they have a recipe on the box for roasted potatoes. You just mix the dressing envelope with some oil and pour that on the potatoes. Nummy!
