A little of a strange question and maybe a star wars buff could help me. My wife and I have never watched any star wars movies. I really want to ride this but I like to understand whats going on. What Star Wars movies do I need to watch to have a basic understanding, without watching all of them?
 
In canon, the ride’s events take place after the eighth movie (The Last Jedi), which is the second movie in the sequel trilogy. So if you want to watch something but not everything, watch episodes seven and eight.

That said… unless you know absolutely nothing about Star Wars, you’ll get it. The First order and the masked guy are the bad guys. That’s pretty much all you need.
 

You’re in no pressure to be a Star Wars buff to enjoy Rise. It’s so immersive… even as someone not as engrossed.
 
Personally I would watch the movie the ride is based on: Star Wars: Episode VII – The Force Awakens

Knowing the characters definitely makes it a better experience.

Really, even though canonically the ride takes place after Ep. 8, you will understand all charactes involvced with just Ep. 7. That said, you may as well watch 8 & 9. But, really, you should watch 4-6 to really get the foundation. But, if you're gonna watch those, then probably good to watch 1-3 (recommended after 4-6). So, I mean, you should really watch some Star Wars. You never know, you might like it. Some people sure seem to. 🙂

You will understand the plot of the ride without seeing the movies. There are plenty of rides that have no movie associated with it and they make sense all the same. You understand what is happening on rides like Dinosaur without needing any previous background info.
You won’t know who these people are, but you don’t really need to. Tone will tell you if a character is friendly or hostile.
 
I would agree with @BrianL and just watch them all....haha
But if you did just want to watch one, I'd do Force Awakens, so you'll be familiar with the characters, but my DS had not at all see any of the sequels, didn't know any of the context/characters, and he still LOVED, LOVED the ride.
