I know the different rides have different seating arrangements so I'm not sure how well this can be anwered. There will be 5 of us, 2 adults, 3 children 7, 4 & 2. On the rides my 2 year old can go on, if we need to split up, would an adult and the smaller two be able to fit in most seats? It kind of scary being out numbered by your kids LOL
DH and I have only been to WDW once and neither of us remember much about the seats

We just went last month with 2 adults, and three kids, 15, 8, & 2. On all the rides we did together, DH and I both were able to sit with the 2yo and the 8 & 15yo sat together. Usually we were able to be in the same car (front and back seat) I think Peter Pan's Flight was the only one where we had to split up into two boats. I think for the most part you'll be fine with one adult and the two little ones together.

When we went last Jan. there were 5 of us, me, DH, DD's 7, 4, 2. There were actually MANY rides that all 5 of us were able to all sit together, including Peter Pan, Winnie the Pooh, Haunted Mansion, etc. The only ride that we had an issue with was Dumbo, and I think the CM just didn't know what he was doing. Said you could have no more than 2 in a seat, but wouldn't let my 7 yr. old go with my 4 yr. old. She ended up having to ride alone and was pretty upset about it. She still tells everyone that it was her least favorite ride. We saw many other sets of children riding alone though, so I think he just was confused.

I don't think you'll have any problems. It really worked out GREAT for us. Have a blast!!
