Almost all attractions have "mainstreamed" lines, where a person in a wheelchair or
ECV will just use the normal line. Some of the lines may, at some point, have a wheelchair symbol and an arrow, so you follow that instead. A few of the lines, especially at MK and EC are not mainstreamed and there is an indication of where to go for the alternate entrance.
If you do go on a ride and unload is not the same as load, your ECV will magically appear at unload and be waiting for you. If you join people on a line and decide you don't want to ride, there is a "chicken" exit which takes you directly to the unload area.
Most of the exits are very close to the entrances. If you are not sure, ask any Cast Member nearby and they will let you know.
