Rides at night.

People have mentioned riding outdoor rides for a better experience, but everyone is neglecting the lines. Some rides are targeted to kids and have short lines after 10:00. Riding monsters inc laugh floor with few people so you'll have a better chance getting chosen. Riding Cinderella and the other princesses is much better at night. Riding Mickey at town square is a 10 minute wait after the fireworks or parade. You can ride under the sea and then go next door and ride Aeriel with no wait. She'll be so lonely she'll be happy to see you! You also get much more talking time with the princesses at night.
 
PeopleMover is great at sunset and and nighttime (good photos). It's a great rest for your tired feet too at the end of the day. I rode that twice in a row while my husband rode Space Mountain last time we went (I'll go on Space Mountain 1 time each trip but that's enough for me :) )

BTMRR is also a great choice.

HM as well.

ToT is good as well though I don't ride that anymore but my husband does.

Also sometimes it's just nice to people watch (both day and night) and walk around getting some photos, etc
