The guide maps they give you to each park, which is free, has a little symbol by each attraction/ride that has a height restriction. I'll look it up and see if I find anything...

This seems like a great list. I hope it's comprehensive. It also indicates which rides may be scarry, loud, or too intence for little ones.

Err, "Reminder there is a Child Swap Option Available to you at the Attractions!" what's this about? I'm going to look it up, too...
"To switch off, there must be 2 adults. When your group reaches the head of the line tell the Cast Member that you want to exercise the child swap. At the loading area, one adult rides while the other stands off to the side and watches the children. The other adult will then be allowed on the attraction, at the head of the line, on the very next ride while the adult that already enjoyed the ride stays with the kids." I got this off

I'm traveling alone with 2 kids, one is big enough to ride everything, and one is too little. We will exclude the few restricted ones.
