I was thinking the same thing, Glo! I got an alternate answer and have sent at least 3 others!

Thanks for the tip Glo! I am a bit concerened about meeting all the parents of kids on IEP's. There are 45 students who are on IEP's right now! I have been reading them and doing my best to know the important aspects of each student. Everyone tells me there is only one parent I have to look out for.

German Pancake...

1 cup milk, room temperature
6 eggs, room temperature
1 cup all-purpose flour
1 drop vanilla extract
1/4 teaspoon ground cinnamon
6 tablespoons butter

Preheat oven to 450 degrees. In a large bowl, using lowest speed on electric mixer, combine milk, eggs, flour, vanilla extract, and cinnamon; mix until well blended.

In a 13x9-inch glass dish, melt butter in oven until hot and sizzling. Pour batter into hot dish and bake 15 to 20 minutes or until puffed and golden brown (it may puff irregularly in the center). Remove from oven. Working quickly, cut into serving-size pieces and transfer to individual serving plates. Top with your favorite topping and serve immediately.

Topping Ideas:
Sifted powdered sugar
Fresh applesauce with a dash of cinnamon
Crushed pineapple, drained
Whipped cream and sliced fresh strawberries
Syrups (maple, your favorite fruit syrup, or honey)
Canned pie filling, cold or warm

Makes 4 to 6 servings.

LOL, Gina! They are HUGE! Too much egg for me. That is exactly what I was thinking it was though. We used to have a restaurant around here that served them.

DD made her first trip home this past weekend. It was so nice having her home:D
