Well, the squash was OK but labor intensive.
First off, at the grocery store I had to ask someone to be sure I was buying the right thing. I cut the 4 pound (they were all big)squash in half, scooped out the seeds then microwaved it. Then the fun part, you take a fork and pull it over the flesh inside the squash and it comes out in strands like spaghetti. The recipe called for the squash and part skim mozzerella cheese to be placed in a casserole dish. The next layer was sauted mushrooms, zucchini, garlic (which I omitted), parsley, canned tomatoes, and a little more cheese. Then there was a bread crumb and cheese topping. I liked it. DS wasn't home but I am sure he wouldn't touch it. DD and DH tried it but neither are much of squash eaters. I lliked it but it makes so much. I am going to try to freeze it in individual portions. At least my leader at Weight Watchers will know I am willing to try new things.
Actually, the squash my itself wasn't bad. I froze some of it to have later with just salt and pepper.
