Hi:
I'm looking for some ideas for quick additives to rice. My mother had been quite ill with a limited diet, one of the items being plain white rice that she could eat. She is now better and able to eat anything. Anyway, we have some of the Success Boil a Bag Rice packets left and I wanted to add something to the rice, i.e., broth, cheese or something like that, that would be quick and easy. Any suggestions would be great. Thank you.
 
Here are a couple of ideas although we generally use long cooking rice so I'm not sure how they'll work with the boil in bag variety but I'd think it would be ok.

Substitute chicken broth for a portion of the water

Add curry to the rice while it is cooking (maybe stir it in after it is out of the bag?)

When the kids were younger I'd take a can of cheese soup, mix it with a tiny bit of milk to thin it out and then stir it into the rice and add cooked broccoli...got them to eat green veggies!

I usually long cooking rice as well which I love, but we got these for her when she was so ill and if I wasn't at home, she could make them herself during the day. There definitely is no comparision between the boil in a bag and the long grain, that's why I thought if I could add something to them, they would be better. Anyway, thanks for the great ideas. I'm definitely going to try them.
 
I add salsa and cheese to white rice (sometimes I stuff it all in a green pepper). For brown rice I add pineapple chunks, green peas and shredded coconut, then add a dressing of pineapple juice, sesame oil, salt, pepper and ginger. I serve it cold. It's very tasty.
 

Here are some I've collected.

Green Rice
(you may want to adjust it to serve 20-30, you'll be glad you did) (serves 4)

3 cups cooked rice
1 cup grated sharp cheese
1/2 tsp salt
1 cup milk
1/2 cup parsley, finely chopped
1 egg, beaten
1/4 cup melted butter or margarine
1 small onion, chopped
1 pimento, minced (optional)
1-4 oz. can mushrooms, drained

Mix the ingredients in the order given. Place in a 1 1/2 quart buttered casserole. Bake 350 for 45 minutes

Spiced Rice Side Dish

2 c water
2 tsp bouillon
1 c rice
½ tsp chili powder
½ tsp cumin
1/8 tsp thyme
½ tsp turmeric
½ tsp coriander
2 Tbl salsa
1 Tbl butter
2 tsp cilantro, chopped

Bring water to a boil & add all ingredients. Return to a boil, reduce heat & simmer 20 min or until rice is tender.

JOLLOF RICE
Disney’s Animal Kingdom Lodge, Boma
Yield: 16 servings

2 quarts Coconut Milk
2 quarts Water
2 pounds Onions, diced chunky
16 ounces Black Eye Peas, soaked overnight
2 ounces Ground Turmeric, toasted
2 ounces Ground Coriander, toasted
4 quarts White Rice/Jasmine/Basmati, washed
8 ounces Sugar
1 ounce Chopper Cilantro
To taste Salt and Pepper

Cook the black eye peas half done and set aside. In pot, combine all the ingredients. Cook rice until black eye peas and rice are done. Sprinkle with parsley and adjust seasoning.

PEANUT BUTTER RICE
Disney’s Animal Kingdom Lodge, Boma
Yield: 10 servings

¼ pound Peanut Butter
¼ quart Coconut Milk
1/16 quart Soy Sauce
1/8 t. Ground Ginger (dry)
1/8 t. Ground Coriander
¼ t. Granulated Garlic
1/16 quart Sugar
1/8 t. Cayenne Pepper
½ pound Basmati Rice
1/8 bunch Parsley, rough chop

Cook the basmati rice according to direction ration (normally 1:1¼ liquid.) In a small pot, combine all the ingredients. Mix well until smooth and heat to proper temperature to 145 or above. Taste and adjust seasonings. Mix the hot basmati rice with the peanut butter sauce in a large bowl and add the parsley. Mix well.

Citrus Rice
Disney's Polynesian Resort

1 1/3 cups water
1/2 tsp. Salt
7 Tbsp. butter, divided
1 1/3 cups pre-cooked rice
2/3 cup chopped celery
1/3 cup chopped Spanish onion
3 Tbsp. chopped orange peel
1 1/2 Tbsp. chopped lemon peel
1/3 cup orange juice
3 Tbsp. chicken broth
Salt and white pepper to taste

Bring water, salt and 2 tsp. butter to a boil. Stir in rice. Cover and remove from heat. At the end of 5 min., fluff with a fork. Set aside.

Heat remaining butter in a 9" skillet. Add celery, onion, orange and lemon peels and mix in rice. Sauté for 7 minutes. Add orange juice and chicken broth and season to taste. Spoon into a 1-quart buttered casserole and bake at 350 deg. F for 15 min.



Or for just using the white rice in a casserole....
Five Spice Fried Rice
Serving Size: 2
1/3 lb boneless top blade steak
1 tsp sugar
¼ tsp anise seed
¼ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp grated gingerroot
¼ tsp crushed red pepper flakes
1 tsp sesame oil
1 clove garlic, crushed
1½ c cooled cooked rice
2 Tbl peanuts
2 tsp soy sauce

Cut steak into ½ inch cubes; refrigerate. Meanwhile combine sugar, anise seed, cinnamon, cloves, gingerroot and red pepper flakes; mix well. Add beef cubes; stir to coat with spice mixture. Heat sesame oil in a medium skillet over medium heat; add garlic and cook briefly. Add beef to skillet, cooking until lightly browned Add rice, peanuts and soy sauce; stir-fry until thoroughly heated.

Bacon Cheeseburger Rice
Serving Size: 4

1 lb ground beef
1¾ c water
2/3 c barbecue sauce
1 Tbl prepared mustard
2 tsp dried minced onion
½ tsp pepper
2 c uncooked instant rice
1 c shredded cheddar cheese
1/3 c chopped dill pickles
5 bacon strips -- cooked and crumbled

In a large saucepan over medium heat, cook the beef until no longer pink. Drain.
Add water, barbecue sauce, mustard, onion and pepper. Bring to a boil.
Stir in rice. Sprinkle with cheese. Reduce heat. Cover and simmer for 5 minutes.
Sprinkle with pickles and bacon.

Meatballs Hawaiian
Serving Size : 4

1 lb ground beef
½ tsp salt
¼ tsp ground ginger
1 egg
1 tsp water
¼ c flour
3 Tbl vegetable oil
14 oz pineapple chunks in juice
¼ c firmly packed brown sugar
2 Tbl cornstarch
¼ c cider vinegar
1 Tbl soy sauce
2 green peppers -- seeded, cut in strip
Hot cooked rice

Mix ground beef lightly with salt and ginger. Shape into 16 balls.
Beat egg slightly with water. Dip balls in egg mixture, then in flour to coat well.
Brown in oil in a large frying pan. Remove with slotted spoon and set aside.
Drain juice from pineapple into a 1 cup measure, add water to make 1 cup. Stir into drippings in pan.
Mix brown sugar with cornstarch, vinegar and soy sauce. Stir into pineapple-juice mixture.
Cook, stirring constantly, until sauce thickens and boils 3 minutes.
Arrange meatballs, pineapple chunks and pepper strips in separate piles in pan. Stir each gently to coat with sauce, cover.
Simmer 10 minutes or until meat balls are cooked through. Serve over rice.

DD loves to add a can of either Cream of Mushroon or Cream of Chicken to rice. I guess you could use any of the Cream soups for a change of pace.
