Anyone have a good recipe for this? I always cook rice and not sure how to make a good pudding with the leftovers. So many recipes everywhere, but would like a few that are tested and good.

Thanks!

I have used one from myrecipes.com. I can't remember which one it was, but it was highly rated on the site. Try looking there and look for one with 4 or 5 stars. Good luck. Rice pudding is great!

Let us know if you find a good recipe. I love rice pudding, but never make it. My mom used to make it baked, with raisins in it. But, all the recipes I've found are cooked on top the stove.

I make a pretty good rice pudding. I usually make it with rice that I already made (although it can be made with not premade rice too).
It's also just 3 ingredients-
Rice (up to 2 cups)
1 can of condensed milk
regular milk (any percentage)

Take the rice you already have and put it in a large saucepan.
Start heating over med-high heat.
Add the can of condensed milk
Add enough milk to cover the rice by about 1/2 an inch. (The milk can be heated beforehand in the microwave to make the cooking quicker)
Stir constantly until the milk reaches a boil and then keep stirring for about 2 minutes more.
Let cool. (Or you can eat it hot- I like it that way)
You can also add a little cinnamon to it if you like but I prefer it either plain or with cinnamon once I have it in my plate.

My recipe is very similar. Use sugar instead of condensed milk. Throw in a couple of sticks of cinnamon and a couple of pieces of lime rind. Golden raisins sometimes.
