Ribs - what veggies do you like with them?

Robs will be made in the oven - :scared1:.... and eaten indoors.....

Looking for suggestions that are not corn on the cob.....
 
How about some oven roasted veggies?

I like to cut up yellow squash, zuccini, bell pepper, a little onion and a couple garlic cloves. Toss in a little olive oil, sprinkle with a little pepper and cook in the oven. Don't overcook........depends on how you like them. Sprinkle with a little grated parmesean cheese and put back in the oven just for a couple of minutes.

Baked beans, cole slaw, corn on the cob, steamed brocoli/cauliflower, baked potato.
 

Potatos, baked beans, or corn. No other veggies need apply when ribs are involved. That's just sacrilidge!
 
Lately I've been fixing potatoes in the roaster. Scrub the potatoes, and slice. Lay them on the rack in the roaster, drizzle w/ olive oil, and sprinkle w/ parsley, and sea salt. Yummy!

Either that or corn;)
 
I'm way late but for us it's always Arroz y gandules(rice and peas) and Fried Plantains!*and I am Polish!:rotfl2:

Made pulled pork on Saturday, with this Ramen cole slaw

2 pkgs cole slaw mix
1/3 c. cider vinegar
1/2 c. oil
1/2 c. sugar
2 packets ramen seasoning mix
cilantro, salt, and pepper to taste

Mix all this well in large bowl. (I added a little more of the vinegar, and oil w/ a little water)

Stir in 1 small pkg slivered almonds, 2 packets of salted roasted sunflower seeds, and 2 packages uncooked ramen, broken into small pieces.

ended up with spaghetti squash... was in the market, saw some, and decided it has been ages since I had any....
 
We make mashed sweet potatoes.

If it is more for adults we make a spicy version. I use fresh potatoes, cube them and steam them until soft, in a bowl add 2 chipoltes and a couple tablespoons of adobo sauce and some butter. Mash it together.

If it is more for kids or people who don't like spicy food I mash them and then sprinkle on a topping that is 1/2 cup flour, 1 cup crushed nuts (we LOVE cashews) and 1/2 cup brown sugar. Sprinkle that on top of the potatoes, then slice up a stick of butter and dot it across the top. Microwave for 7 minutes on high and it will form a yummy crust on top of the potatoes.

For a huge, time saving short cut I use canned sweet potatoes that are NOT in syrup. Drain them first.

If using canned, the ratio above will take care of about one really large can of sweet potatoes. If using fresh I steam 5 or 6.

Can't see putting spaghetti squash on the same menu with ribs.
