Can someone please tell me which rresturants do the buffet type things?

Had a look through the guide on here and steak house looks my fav but cannot see if they do Buffet or not.

Also would any of you rank other places above the steak house?

When you say had a look at the guide, do you mean the DLP Foodguide? This is usually a very helpful and up to date site.

As to your question about the Steakhouse, AFAIK neither the Silver Spur Steakhouse in Adventureland or the The Steakhouse in the Disney Village do buffets.

Thinking off the top of my head the restaurants that do buffets are The Lucky Nugget, Plaza Gardens and Auberge de Cendrillon (well, buffet starter and desserts there) in Disneyland Park, Inventions in the Disneyland Hotel, La Grange at Billy Bob's in the Village, Cape Cod at Newport Bay, Beaver Creek at Sequoia Lodge, La Cantina at Santa Fe.

Please correct me if I've got it wrong.

The Steakhouse does a character buffet but only on Sunday lunchtimes.
