Vegetarian Chili

1/4 cup olive oil
1/2 teaspoon dry thyme leaves
1/4 cup diced red bell pepper
1/2 teaspoon dry oregano leaves
1/4 cup diced green bell pepper
1/2 teaspoon cracked black pepper
1/2 cup diced celery
1/2 teaspoon ground cumin
1/2 cup diced red onions
1 1/2 teaspoon chopped jalapeno pepper
1/4 cup diced fresh carrots
1/4 cup tomato paste
1 tablespoon minced garlic
1 quart water
1/2 cup sliced fresh mushrooms
1 tablespoon cornstarch
1 cup fresh or frozen corn kernels
1 1/2 cup canned great northern beans
2 cups canned diced tomatoes
1 1/2 cups canned pinto beans
1/4 cup black olive wedges
1 1/2 cups canned black beans
1 tablespoon chili powder
1 1/2 cups canned kidney beans
1/4 teaspoon cayenne pepper

Heat large saucepot until hot.
Add olive oil, then peppers, celery, onions, carrots, mushrooms and garlic. Cook until the vegetables are tender.
Add corn, tomatoes, olives, tomato paste, seasonings, jalapeno peppers, and water. Bring to a boil.
Mix cornstarch with a little water and stir into pot to thicken.
Add drained beans to the pot. Cook until heated through.
Check flavor and adjust seasonings to taste.

The Lighthouse Sandwich

Olive Panini Bread
1/4 cup Hummus (recipe follows)
1/2 cup Broccoli slaw (recipe follows)
Vine ripe tomatoes sliced (2 slices per
sandwich)
Hummus:
2 Tablespoons pureed garlic
3 cans garbanzo beans -- (15 oz)
4 tablespoons water
Juice of 2 freshly squeezed lemons
1/2 cup tahini paste (pure sesame seeds)
1 tablespoon salt
Broccoli Slaw:
3 cups shredded broccoli slaw mix
1 1/2 cups honey Dijon dressing

Hummus: Put garbanzo beans into food processor, mix with garlic, salt and tahini paste. Puree approximately 15-30 seconds, then add lemon juice and water. Continue to puree until smooth. Should yield about 15, 3 oz servings. This recipe can be cut in half to make a smaller portion. The hummus will hold for five days once prepared
Broccoli Slaw: Toss together and set aside.
Slice bread and spread with hummus, add broccoli slaw and 2 slices of tomato.

Maui Scalloped Potato

1 pound Idaho Russet potato (washed and sliced)
1 cup heavy cream
1/4 cup cheddar cheese
2 tablespoons Parmesan cheese
1/4 cup sweet onion
1 teaspoon Kosher salt
1/4 teaspoon black pepper


Combine all ingredients.
Place in a greased 2” hotel pan and bake at 350 ° Fahrenheit for one (1) hour.
Let stand for five (5) minutes before cutting.
Serve hot.

That recipe doesn't look like it makes too much (like some of them :rotfl: ), so I wouldn't use a very big one.

off topic, no food talk for me right now, my aunts lunch is killing me.
 
CHH. Hit and miss for us. Not as good as they use to be, from our experience. Sometimes terrible food and service, which keeps us away for a long time. Then we finally go in and it's "okay". (Better than Pecos Bill's. ;) )
 
I was reading that recipe for Maui Scalloped Potato. It just looks like a run of the mill scalloped potato recipe to me. :confused3 2 Tablespoons of Parmesan cheese? Why bother? :laughing: :confused3
 
Well, bother if you like scalloped potatoes ;)
They don't have them anymore anyway......noodles now.

Chicken Caesar Salad Pizza

2 chicken breasts
2 garlic cloves -- minced
1/4 cup Parmesan cheese -- grated
1 small onion -- chopped
1 red bell pepper -- chopped
1 cup mozzarella cheese -- shredded
Refrigerated pizza dough
1/2 head romaine lettuce -- shredded
2 tomatoes -- diced
Prepared Caesar salad dressing
Croutons -- optional

Cook chicken and chop into 1-inch pieces.
Over medium heat, combine garlic, onion and red bell pepper with 2 tablespoons Caesar salad dressing and cook until vegetables are tender. Add chicken pieces and continue cooking for another minute.
Roll out pizza dough to cover pizza stone and create a ridge around the edge. Brush pizza dough lightly with salad dressing. Spread chicken and vegetables on dough. Top with mozzarella and Parmesan cheeses.
Bake at 350 degrees for 20 - 25 minutes, or until cheese is bubbly and crust is golden.
While pizza is baking, chop lettuce and tomato and toss with salad dressing to taste. When pizza comes out of oven, place salad on top of pizza and garnish with croutons if desired.

2 cups Cap'n Crunch cereal
1 1/2 cups cornflakes
1 egg
1 cup milk
1 cup flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 pounds chicken breasts -- cut in 1 ounce tenders

Coarsely grind or crush the two cereals and set aside.
Beat the egg with milk and set aside.
Stir together flour, onion and garlic powders and black pepper. Set this aside also.
Dip the chicken pieces into the seasoned flour. Move around to coat well, then shake off excess flour. Dip into egg wash, coating well. Dip in cereal mixture, coating well.
Heat oil in a large heavy skillet to 325 degrees. Drop coated chicken tenders carefully into the hot oil and cook until golden brown and fully cooked, 3-5 minutes depending on size.
Drain and serve immediately.

Bananas Foster Cheesecake

Crust
1 1/2 cups Nilla Vanilla Wafer Cookie crumbs
Butter for greasing baking pan
Flour for dusting baking pan
1/2 cup melted butter -- clarified
Batter
2 pounds cream cheese
2 eggs
1 teaspoon vanilla paste or extract
8 ounces granulated sugar
8 ounces sour cream
Fosters sauce
4 ounces butter
4 ounces brown sugar
1/2 teaspoon cinnamon
2 ounces banana liqueur
1 lemon
1/2 an orange
Garnish
Mint springs
Powdered sugar

Combine ground vanilla wafers and clarified butter. When the mixture is the consistency of moist cornmeal, you've added just the right amount of butter. When squeezed it should hold together easily.
Rub inside of a springform pan with butter. Dust sides and bottom with flour, discarding any powder that does not stick. Using your hands, tamp down the butter-wafer mixture forming a short wall up the side. When the mixture is even and all holes are filled in, bake the crust at 300 F for just a few minutes to set the shell.
For the filling, beat cream cheese until smooth. With machine running, add granulated sugar, stopping occasionally to scrape down the sides. With the machine running, add the eggs, one at a time. Add the vanilla paste or extract and sour cream. Pour batter into prepared, cooled pan and level off with a spatula. Bake at 300º F for 40 minutes.
For the sauce, in a small sauté pan, cook brown sugar and butter slowly until the mixture liquefies. Add lemon juice, banana liqueur, orange juice and cinnamon. Bring mixture to a boil and then simmer for 10 minutes and cool. In another sauté pan, sauté banana slices in sizzling butter. When browned on one side, douse the fruit with some of the Fosters sauce.
Cut cooled cheesecake into 8 portions. Top with Fosters sauce. Dust with powdered sugar and add a sprig of mint.
 
We've been a couple of times.....years ago. (the lines used to be out the door and all the way down the ramp).
The inside was fun to look around. DD liked that part.
The food.....just okay. No plans on going back.
The one in Seattle closed down years ago.
