Restaurant hours

Does anyone know of a way (an easy way would be best... ... but really any assistance will be appreciated) to find out what hours various Disney restaurants are open? Some of the menus I've seen online list hours, but not all... is there any comprehensive list or site I can check?

When calling for ADRs (which I will be doing for the first time in a few weeks, unless they work the bugs out of the online system and get it up & running), how do you even know what times to request, if you don't know what hours the restaurants serve lunch and/or dinner on the dates you'll be in the world?

And to be really specific about it... we're coming from the west coast, so we'll arrive pretty late in the evening on our first day... do we have any hope of eating the night we arrive at all? Or do most places stop serving dinner around 9:00?

I'm afraid no one site has thorough and accurate hours. Your best bet is to call Disney Dining with specific dates and restaurants and they may be able to tell you.

I'm keeping my fingers crossed for the online ADR system... I am just *not* a phone person, and the thought of spending an hour on the phone hashing and re-hashing various dining choices/options with a CM gives me hives.

We will be a party of 3 adults (no kids), and we'll actually WANT late-in-the evening dining times, so maybe I'll have some luck there... as the "Disney norm" definitely seems to be to travel with kids and eat early. Character dining is also not a deal-breaker for us, so that may help too. But it doesn't change the fact that we really have no idea what we're going to want to eat on a specific day three months from now... I have NO idea how to figure THAT out!
