I recall one trip where I simply couldn't get out of bed (maybe day 3 or 4?) because of the schedule I had us on (and we had driven from MD, so it was more like day 5). It was spring break and we were up very early for the 8 a.m. emh, and I'm sure we stayed for fireworks every night. Everyone went to EPCOT without me and I met them there later 
DH and I recently came back from a 9 night trip (first one without the kids). We only spend 3 days in the parks but they were toward the end of our trip. DH said he liked how relaxing the whole trip was but would like to have the last day be more relaxing on future trips.
In all of our many, many trips to WDW, we rarely had rest days with the kids. But I think the last day would probably be really nice to just enjoy the resort and have it feel like a "vacation" - we just never did it that way

It sounds like you have thought of some rest/easy time. With the new FP+, you can schedule them for the afternoon and, if you can make it to the opening to take advantage of the shorter lines, great!
