We are planning a quick trip May 23rd-25th with a 2 year old. We are looking for a resort with a great pool and/or activities suitable for a toddler. We do not plan to go to a theme park but love water activities and having everything in one place. We do have a car but would prefer less traveling as its only a short stay. We have enjoyed Omni at Championsgate in the past due to having many options on one property and would like something similar. Kitchen is a plus but not necessary if there are decent options onsite. So far have narrowed it down to 2 options that are almost identical in price but open to other suggestions (under $500/night).

Tuscany Village has a nice little playground with a shade structure over it. My 3 year old enjoyed it. We kept too busy going to amusement parks to try out the pool. It is right next door (walkable) to outlet mall so lots of quick food options.

We just took my 3 year old to the Embassy Suites Lake Buena Vista and he loved the pool. They have a splash pad with a waterslide that he went crazy for. They also have a great breakfast and evening reception and show a movie by the pool every night. Parking was $14 which is lower than a lot of hotels in the area.
