Usually 8pm or 10pm depending on the season.

Poly closes shortly after dusk. Not totally sure on the other resorts. Pools are open quite late though if it's just swimming your interested in.

Oops. I should have stated that I was mostly interested in July. We're staying at Wilderness Lodge, but I assume all the resort pool rules are the same. Thanks!
