Does Kona Cafe, Trails End, WCC, ect always require a reservation? We're going at the end of August through Labor Day. Would love to keep the schedule open a bit more.

Put another way, if you show up without one, expect to be turned away more often than not.
 
That is during a Free Dining period, even if crowds are low most restaurants do get fully booked, even at the resorts. Might have openings closer to your dining date but might not be ideal times. Even if you keep your schedule open not a good idea to show up without an ADR. You can always make one a couple of days ahead or even that day if anything is open.
 

We've gotten same day reservations at Trails End and have walked up at Kona for late lunches, but it's never guaranteed. My advice would be to check what is available on MDE about 90 minutes to 2 hours prior to when you want to eat to see what is available and making an ADR then.
 
And I've been turned away at Trails End especially during free dining. I'd definitely snag and ADR if you can. Kona I've walked up 2x's for lunch but never tried dinner. WCC can get VERY busy but I have had good results with walk up. I've always tried to do walk up at odd times though and your chances are better if it's an off time.
