I would suggest making your ADR's at 180 days and attempt to switch them around or cancel them all together if they don't jive with your FP+ selections and you can't work around them.

Yes, depending on where you want to eat, when you want to eat, and when you go. At least that's been my experience. We've been able to change reservations well into the 180 day window (just made some changes) but options are much more limited after the 180 day window. If you want 'Ohana or BOG I'd say you need to make those at 180. A bunch of signatures should be available up until departure date. Places like The Wave, Captain's Grille, and some others that aren't as popular are probably doable whenever.
 
If you're flexible, I've been able to get stuff even up until the day of. But if you have a specific time in mind, and/or a big group, it's best to make them further in advance. Finding a table for 4 will always be easier than say, 8.

I've gotten Dining Reservations the day before and the day of, it's always possible. It might not be the most popular retaurant or the exact time you want, but you can almost always find something. Of course Christmas Week, Easter weekend, etc. might be a different story.
 
Depends when you go! We go in mid to late August and I was able to make reservations at 60 days out
 
Yes, you can wait, but prepare to be flexible about where you eat. If you want harder to get places - BOG, O'hana, etc. - it's best to try at 180 days and go from there. Or work your FP+ around your dining plans.
 
I made them at 180 days but once I made our FPs I was able to change some of them around. Otherwise I am patiently waiting to get a few. You just have to check regularly.
 
It will vary on a few factors: when you want to go, what restaurants you want to eat at, and how many are in your party. If you are flexible on where you eat and when then yes there will be plenty of places to eat. But if you have your heart set on a specific restaurant then you'll want to book at the 180 day mark. For example, our upcoming trip is over Christmas so Christmas Eve and Christmas Day dining reservations were incredibly important to us, so we were online at our 180+10 in order to guarantee that we got the reservations that we wanted.

Outside of the most popular places -- Be Our Guest, 'Ohana, Cinderella's Royal Table -- there will still be plenty of availability at most restaurants 60 days out.

A data point: Two weeks ago, we were at Hollywood Studios at 7 p.m. and decided we wanted a table-service meal for dinner that night. We checked the app, and every single Epcot restaurant except Via Napoli had availability for later that evening. Literally every other one. We booked a Coral Reef at 8:20 and took the bus over. We weren't looking at the other parks and hotels, but a quick scan showed reservations at tons of other restaurants all around property.

My point is unless you're committed to trying one of the locations I mentioned above, finding reservations two months in advance will be simple.

EDIT: If you're visiting over Christmas, ignore everything I just said. That changes everything.
