Reservations after Park Hours

We are headed to WDW in January and the posted park hours are a little short (9-6 in MK). I noticed a few in restaurants are accepting reservations until 7 pm. Is that an indicator they may extend park hours? Or are late reservations a thing, and we would get to extend out our day in the park for an hour? Debating picking one up just for the chance to exit out through a deserted park after dinner.

I just ran into the same debate earlier this week when Disney announced extended hours for the first week of January. I'd say book the later reservation! I called to confirm (my reservation is exactly at park closing time in MK) and the woman on the phone said with decreased capacity they are trying to find more ways to get people reservations! She said it is totally normal to have an after hours reservation time, but buses will on ly run about one hour after park close, so you may need to get an Uber home at the end of the night!

Cool. I'll go ahead and make the reservation. We're actually staying at Bay lake so MK transportation is a non issue.
