If we have a 5:30 reservation at Chef Mickeys & arrive 15-20 minutes early- how likely is it that we will be seated early? Or will we most likely have to wait until 5:30 to be considered for seating?

There is no way to know because it'll depend on how busy is the restaurant (i.e. are they ahead, on, or behind schedule). I usually arrive about 15 minutes early to most of my ADRs and I've been seated anywhere from right then to about an hour later. I haven't heard the Chef Mickey's is notorious for being late, but they are very popular, so it means the potential is always there. Having an ADR near opening does help.
 
I agree with the pp that it all depends on how busy it is at the time, but I think your chances of getting seated right away are pretty good since your ADR is just a half hour after opening. With that said, we have eaten at Chef Mickeys many times over the years and usually get seated right away or just shortly after checking in (we always get an early ADR time and arrive at least 15 minutes early). With that said, the only place we have ever had to wait until our ADR time (regardless of what time we arrive) is Boma.
