We have a reservation for 5 under DS name. The plan is for all 5 of us to eat together. If for some reason he and his family don't make it will DH and I be able to use the reservation even though it is under DS name? I'm pretty sure that you only need 1 person to show up not to be charged the cancellation fee.

That is accurate.

If he's not going to be able to go, and you know more than 24 hours in advance, it would be a kindness to others to call Disney and try to change your number downward, as that may give others an opportunity to dine.

I have been checking for dinner for 2 but nothing is available when we want to go. I'll keep checking but don't really want to change in case he is able to come.

Wasn't saying change before you know, just saying that you will likely know more than 24 hours ahead and making the switch (calling more likely) would be a kindness to others.

I am in the same boat making adrs for 5 but on occasion due to health only 3 can make it (which we don't know until the day progresses). Everyone is listed on the adr when made so you should be fine to check in even if contact person for adr is under another person in the party.

It doesn't matter how many show up. We are a party of 5 and I frequently make reservations for 6 or 7 because it won't give me a reservation for 5, but it will for 7. As long as someone shows up, you are fine.

It doesn't matter how much people show up or who turns up to the reservation. As long as someone turns up, you won't be charged for the people who don't attend the reservation.

Unless it is a pre-paid ADR. Those you are penalized for fewer people showing up.
