We are renting a car for an upcoming trip in June and were considering one way rental since we will be staying on property and will only need the car for travel. It will be sitting the week we are there - anyone ever actually done this and how did it work out?

Why not price out the one way (or two one-ways... how will you get back?), AND a "round trip"? Go with the cheapest.

Does "on property" mean at a Disney resort serviced by Magical Express?

If so I can't help but ask why not use DME if you are only looking for transportation back and forth? Since that complimentary service exists and they will handle your luggage for you, my opinion is that would be far easier than coordinating one-way rentals.

It sounds to me like they aren't flying - they're planning on renting a car to drive from their home to WDW. If so, you can do that, but it's almost certainly going to be more expensive than just renting a car for the week.

Check your options, but make sure you're sitting down when you see the price for 2 one-way rentals.
