Rehearsal Dinner Menus??

So our guest list is MUCH larger than I originally anticipated and Im finding myself looking for any possible ways to cut costs, the main focus being on the food and beverages. I still want a nice sit down meal but I also need to shave some $$$ off somewhere. If anybody has any other ideas Im more than open!! So my main point is.....

I read in Carrie's PassPorter that a way to cut costs is to use Rehearsal Dinner menu's instead of a Reception Dinner menu. I know I used to have a link or a copy of the rehearsal dinner menus but I cant seem to find them anymore. Can somebody help me out? Thanks!! :goodvibes
 
Also, you don't have to use a set menu listed on the catering site. You can build your own menu serving cheaper dishes (like chicken or fish, no beef), making it buffet style, or a brunch (if it's in the morning). That will save you a lot of money.

We served a buffet and when I asked about it being plated I was told the price would go up by at least $20-30 per person. That would have made it almost $100 per guest. It didn't matter in the end because our venue was a buffet only location so that helped save us a lot of $$.
