Is there anywhere I can see a list of what has traditionally been rehabbed during February? We were originally planning our trip for the end of this summer, but turns out I'm pregnant, and I really don't want to go and not be able to ride my favorite rides. We decided to move the trip to next February. I've been in Feb before and honestly can't remember there being a lot of stuff down.
 
wdwinfo.com has a calendar that includes what was closed. Just change the year at the end of the link to get to earlier Februarys.

I feel like, aside from the water rides and installation/removal of the overlays, there really aren't many consistent refurbishments. My guess is that in February, there is a chance that either Splash or Grizzly will be down. The overlay removals should be completed, although there is a chance that IaSW might still be down for the first few days of the month.
 
Aside from water rides, I don't think specific rides always go down in February. It's more like, February is as close as it comes to a "slow" season, so they'll probably try to squeeze in any rides that are due for a tune up so they'll be running smoothly before spring break and summer crowds hit.
