I forgot to mention that those Whoopie Pies are sooooo amazing - they have absolutely no calories, fat, carbs, etc :crazy:

I don't think I've ever made less than a double batch and they are the first to go at any party!!

In my package was a Paris, TX Entertainment cookbook (Overnight Caramel French Toast!!) and a Celebrating Cultural Diversity cookbook (lots of recipes from around the world).

She also included a lovely note on a postcard of the Paris Texas Eiffel Tower, too funny!! Oh, and recipe cards too!

Ok here it is...but don't blame me when hips and waistlines start expanding :p

Whoopie Pies

Pies:
1 cup granulated sugar
1.5 tsp baking soda
2 cups flour
1 egg
1 cup milk
4 Tbs crisco
5 Tbs cocoa

Mix all ingredients together. Drop on ungreased cookie sheet (I use my silpat, they come out perfect every time). Bake for 7 minutes at 425 deg. Let cool on cooling rack.

Filling
1/2 cup crisco
2 Tbs butter
1/2 cup confectionary sugar
1/2 marshmallow fluff
pinch salt
1 tsp vanilla

Mix until smooth, approximately 10 minutes for the fluffiest texture.

Variations: Color the filling according to the holiday (Green - St Patty's day, Red - Valentines day, Red, White, Blue - 4th of July, etc) or add mini choc chips to the filling.

Match up similar size/shape pies, fill/frost the middle with the filling....pour yourself a tall glass of milk and enjoy :teeth:

I usually make 2 batches of pies and 3 batches of filling (I like them really full

I wouldn't make more than 2 batches of pies at one time as the batter sits for too long and the pies will come out flat. If it is very warm in the kitchen I put the batter in the fridge in between batches.

Like I said...all of the crisco in the recipe helps the calories just slide right off your hips ::yes::

***IMGONNABE40!...double check your copy and make sure I wrote 1.5 tsp baking soda...for some reason I think I wrote 1 tsp...it may just be the fact that I wrote it at 5 in the morning when I got to work and I wasn't awake yet :rolleyes:

I mailed mine out in mondays 5/10 mail . Hope they like them. :( Where R they? Maybe the mail is just slow.:D

I am also, because of this thread in the process of typing up all the family recipes that have been passed down to me. My daughter saw me mail the cookbooks and asked me to write them down. When I am done I will post on the board if anyone wants one
Well im off to buy bathing suits its almost 90 and the kids want to cool off.

I could not resist.
Enjoy! Some of the recipes looked funny - others sounded pretty good.

Sorry I did not respond sooner - DH and I just escaped on a spur of the moment Disney Cruise. The keyboard seems to be moving - guess I'll be like this for the rest of the day.:crazy:
