DH and I will be staying in Anaheim for a week in mid-February. We like TS dinners, so we're looking for recommendations for where to eat, as well as advice re making ADRs (do we need to, if so how far in advance, etc.). We'll have hopper passes, so restaurant locations won't matter - DL, DCA, DTD, hotels, off site is fine!

TIA!

Disneyland Dining reservations are released 60-days in advance - in general. For the last few months, there have been issues when a new months is slated to start and the dining reservations have been delayed. If you go online on the 60-day mark and things are showing as unavailable, that usually means they haven't loaded the times into the system yet (opposed to already being fully booked). Overall, dining at DLR is much easier than at WDW, but I would still recommend making an ADR if you know you want to eat somewhere at a specific time. You can often still find prime dining ADRs about a week (or less) out, but they seem to be turning away walk-ups much more often these days (especially in the parks).

In terms of locations, my favorites are Blue Bayou, Cafe Orleans and Carnation Cafe (in DL), Carthay Circle (in DCA), Brennan's Jazz Kitchen and HoB (in DTD), Storytellers (in GCH), and PCH Grill (in PPH). The biggest drawback to Cafe Orleans and Carnation Cafe in the winter is that the majority of the seating is outdoors. So if it rains, they may have to cancel reservations or you may end up waiting a lot longer to be seated at one of the few indoor tables. Brenna's has a lot of outdoor seating as well, which can be pretty cold depending on the weather.
