DF and I are about to head into the excitement of attending our planning session and we're trying to tackle what exactly we want to taste at our tasting session. I am at a total loss based on what was provided to us by Disney (I mean, really, I can't even imagine what the differences are between Dauphinoise and Duchess Potatoes, seriously). The only rave that sticks in my mind is the parmasean encrusted chicken. This sounds like something my Dad makes from an old Italian recipe, isn't it kind of like the fancy man's version of fried chicken? Is it the sauce that truly makes it (because when dad makes it-it seems a bit dry)?

So, if you can sell me on some of your top notch disney wedding food picks, that would really make my life a lot easier because truly, I have no clue!

we had almond crusted chicken from kona cafe and it was fantastic, we had a duo plate with filet steak and parmesan mash and everyone loved it.

For starters we had mickey shaped chicken quasadila(sp)

And wedding cake for dessert

We tried the parmesan-crusted chicken and I thought it was bland (not dry though), but everyone else seems to love it.

This was my rule of thumb for picking what to taste at the planning session: What could they screw up? In other words, I had a pretty good idea what their waffles and scrabbled eggs would taste like, but I had no idea whether the chicken would be dry or the steak would be a good cut of meat. So I picked things to taste that I needed to be sure were done the way I like them.

We had a duo plate of Brandy seared fillet and parmesan encrusted chicken with a boursin cream sauce, garlic mashed potatoes, and asparagus for the wedding.

We also tasted asiago mashed potatoes and truffle mashed potatoes that we didn't like and a merlot butter fillet (which was so good but DH like the other one better.

We created our own menu and even brought some recipes from his family. Huge hits were: crab cakes, Narcoossees steamed mussles, sweet plantains, and roasted pork vieja!

You were able to bring in family recipes?? Are they okay with that? Is there anything that they said no to?

absolutely! well...atleast we were lol. I cant speak for all of Disney's chefs. But we brought in a spanish salad family recipe that i LOVE (his mom makes it for my birthday lol) and the chef was able to recreate it with a Disney spin!! We emailed the recipe about a month before our tasting session. He did awesome...even added crisp green plantain chips on top! yummm....it was a hit at the reception because most of the family knew it! :thumbsup2

Our reception was at the ADH so we had boardwalk catering. We had our menu tasting and everything was so good.

I wasnt a fan of the paramsen crusted chicken. But during out tasting we didnt have the sauce with it. We ended up picking it and it was so good the day of the wedding. The sauce made a huge difference...

Here is photos from our tasting....

It was all very good...

My favorite dishes that I thought tasted the best were the Parmesan Crusted Chicken with the mushroom cream sauce (which I had put on the side), Horseradish encrusted beef (so good!!) The basil mashed potatoes were incredible, the crab cakes with lemon dill sauce and the spanikopitas were all my favorites and now I want to get married again just so I can eat them! :lmao:

for our pre reception we had a boardwalk theme so our food resembled fod you would find at a boardwalk

How many different Mashed potatoes are there??? I didn't realize this. I just asked for the Mashed Potato Bar Action Station.

I guess the Basil Mashed Potatoes are a good choice?:confused3

We had a plated dinner:

Belgian Endive Salad with Romaine and Champagne Vinaigrette (this was great, it even had blue cheese and walnuts!)

Duo plate with beef filet with Blackberry Demi, mahi mahi with limoncello buerre blanc and mashed sweet potatoes with squash and asparagus (the steak was great, the fish was amazing and the mashed sweet potatoes were wonderful and added color and "something different" to the plate)

Chocolate slipper with mousse (yummy!!)

Everyone raved about the food, but said there was too much!

We made our own menu as well
picked our favorite items from different disney restaurants
had the crab cake from flying fish
the salad from Ohana
and
the Filet w/mac n cheese from Jiko
