Recipes needed that can be frozen

I am in need of some recipes that can be made and frozen for a family of 3. My dear friend's MIL was killed in an auto accident yesterday and I want to go ahead and make up some meals and freeze them for when they get back into town.

I know that I could go through and do some searching, but I really don't have time to do that right now. I am trying to think of some things that could help them out since they will be making a 4 hour trip back and forth many times while making arrangements.

Thanks for your help in advance and please keep this family in your prayers. Her husband just lost his father 6 months ago and he is an only child. My heart is just breaking right now since there is really nothing that can be done except pray.

It's been a while since I've worked ahead & frozen meals, but from what I can remember.....

Baked Ziti or Lasagna
Meatloaf
Baked Mac & Cheese
Sloppy Joe mix
various soups - Vegetable Beef, Turkey noodle
Ham or turkey sliced - but doesn't keep well for long

Something I've been doing lately - I roast a turkey (no stuffing) & then shred the meat. I boil bones for a while to make a broth & store the shredded meat IN the broth. It freezes well. We eat this as hot turkey sandwiches - on a hard roll. They're especially good with horseradish sauce. I've done the same thing with roast beef in the past.

The only other thing I can tell you is that I froze individual servings of things - much more varied - for my parents last C'mas...in those Seal-A-Meal things. The sliced meats kept much better this way.

Thanks for your help. I was just at a loss of thinking yesterday. I plan on making my list and going to the store today to get started.

I am sure that she will appreciate it. Since there is nothing else I can do right now, I figured that would help out some.
 
This one freezes well... is great with a salad and bread.

Chicken Spaghetti

1 onion, chopped
4-5 stalks celery, sliced
1 green pepper, chopped
1 stick butter or margarine
one small jar pimiento
1 lb. block Velveeta
2 cups cooked, diced chicken
chicken broth, optional
1 package spaghetti, cooked according to package directions

Saute onion, celery, and green pepper in butter. Mix all ingredients together, adding chicken broth if mixture appears too dry. Bake at 350 degrees, in casserole dish until hot and cheese is melted. This freezes well too.

Brown Bag Burritos

1 pound lean ground beef
1 can (16-ounces) refried beans
2/3 cup enchilada sauce
¼ cup water
3 tablespoons minced onion
1 ½ tablespoons chili powder
1 ½ teaspoons garlic powder
¾ teaspoon salt
½ teaspoon dried oregano
15 to 20 flour tortillas (7 inches)
Shredded cheddar cheese

In a large skillet, brown ground beef; drain. Add next eight ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes. Heat tortillas in microwave until warm. Spoon 3-4 tablespoons of beef mixture down side of each tortilla. Top with 2/3 tablespoons of cheese. Roll up. Wrap each burrito in white paper towel, then in foil. Refrigerate or freeze. Eat burritos cold, or remove foil and microwave on high for about 1 minute. These are great for lunches, and to keep in the freezer for snacks.
