Recipes for fresh cranberries that's not sauce?

For some reason, while I was at Aldi's, I picked up a pound of fresh cranberries. No clue why as I have no idea what to do with them. I would love some tried and true recipes, but not sauce ones, so I can use them - thanks!
 
In a food processor toss in your cranberries, a whole cut orange (including skin and seeds), add sugar and maybe some orange juice. Process till it looks like a relish. make ahead, needs to sit in fridge for a day or two.
 
Apple-Cranberry pie. You can google up a recipe, but basically you make an apple pie and also add the cranberries to it (if I remember right you need some extra sugar, too) ...so so yummy.
 

Here's my cranberry recipe. I really prefer to use cranberries this way instead of as a sauce, and it is YUMMY too!

You'll need one pound fresh green beans and wax beans. I use mine whole and just snap off the ends, but you can trim and slice them if you prefer. You'll also need about 3 tbsp margarine or butter, 1 1/4 cup cranberries, 2 cloves minced garlic, some chopped fresh parsley, salt and pepper to taste

Bring a pot of water to a boil and add a pinch of salt. Add the beans and cook for 3 to 4 minutes. Remove the beans and rinse under cold water.

Melt the margarine over medium low heat and add the beans. Stir in the remaining ingredients. Allow to cook for another 5 minutes.

These are to die for!
 
I made this a few weeks ago and my kids loved it. I halved the recipe for 1 loaf.

Cranberry Orange Bread

2 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs
3/4 cup vegetable oil
2 teaspoons grated orange peel
1 cup buttermilk
1 1/2 cups chopped fresh or frozen cranberries, thawed
1 cup chopped walnuts, optional
3/4 cup confectioners' sugar
2 tablespoons orange juice

In a mixing bowl, combine the first five ingredients. In another bowl, combine eggs, oil and orange peel; mix well. Add to dry ingredients alternately with buttermilk. Fold in cranberries, and walnuts. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees F for 55-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. If glaze is desired, combine confectioners' sugar and orange juice until smooth; spread over cooled loaves

Cranberry orange bread is yummy!! I make it into muffins and add a little struesal (both me and spell check aren't sure how to spell that, sorry) topping.
I'm going to try your recipe. Mine doesn't have buttermilk and in my experience buttermilk in quick breads and muffins always makes them yummier!

I never thought to make it into muffins, monkeybug. That's a great idea, for some reason kids love muffins. :thumbsup2

And who doesn't like streusel? I might have to make some today. :)
 
Cranberry Orange Cookies

1 cup butter, softened
1 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped fresh cranberries
1/2 cup chopped walnuts (optional)

1/2 teaspoon grated orange zest
3 tablespoons orange juice
1 1/2 cups confectioners' sugar

Preheat the oven to 375 degrees. Cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and walnuts. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake for 12 to 14 minutes. Cool on wire racks.

In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Drizzle on top of cookies.
 
Cranberry Sweet Potato Bread. (Or muffins, if you prefer).

I know folks who consider this one of those "sneaky" foods to give kids because of the nutrition value of the sweet potatoes, but it's a popular breakfast bread in our family around this time of year.

I love all these recipes and I am going to try a few, but I have a question.

When I make the fresh cranberries each year (I make the jel), I use a sieve and remove the skins. When you chop and bake as in the bread and cookies recipes, do the skins get tough and in the way?
 
I throw fresh cranberries, blueberries, and strawberries into a blender along with 100% fruit juice (no sugar or artificial sweetener added) and some chocolate mint protein powder. It makes a great smoothie.
 
Put some in stuffing with your turkey.

Make cookies. You can use a chocolate chip cookie recipe and use cranberries and white chocolate chips instead of milk chocolate.

They freeze nicely if you can't use them all now.

Cranberries are delicious (whole, I believe with the skin) in pecan pie, too!
