Recipe with potato chips

Does anyone use potato chips in a casserole? Does it work if the chips aren't so fresh? I have some chips that are a little stale and hate to throw them out. Any ideas?
 
I've used them like bread crumbs in meatloaf and instead of bread crumbs on top of casseroles, like tuna casserole. Pretty much any place you could use breadcrumbs you can use potato chip crumbs!.................P
 
I grind chips, crackers, pretzels (whatever I have that is getting stale) mix it with some grated parmesan and spices and use it as breading for chicken (cutlets, nuggets, fingers).

A family favorite is when I do this with Cheez-its.

OK - now I'm hungry!!!
 
I use stale potato chips as a coating for chicken strips.

Put them in a ziploc and crunch them up. Then, dip your chicken strips in milk (or water) and roll them in the potato chips. I bake them at 350 degrees until they are golden. They're great dipped in honey mustard. My kids LOVE them (and DH too).

I do something similar with orange roughy, but I supposed it would work with other types of fish as well. I sprinkle skinless pieces of fish filet with garlic salt, then dip in vegetable oil. Then I coat them with crushed potato chips. I bake them on a broiler pan, so that they're not floating in oil.

This was one of the few ways I could get my kids to eat fish when they were younger!

After I posted my question, I went to the Frito Lay site and started looking at their recipes. This one caught my eye, so I made these. They turned out pretty good. I didn't put pecans, but I added chocolate chips! Yum!

LAY'S® Potato Chip Cookies
Make 5 dozen
5 cups crushed LAY'S® brand Potato Chips (measured after crushing)
1 cup brown sugar, firmly packed
1 cup white sugar
2 eggs, slightly beaten
1/2 cup milk
2 teaspoons vanilla extract
2 cups flour
3 tsp. baking powder
1/2 cup chopped pecans
Combine the first six ingredients and mix well. Sift together the flour and baking powder. Add to the potato chip mixture and mix well. Stir in the pecans. Drop by teaspoonfuls onto a greased baking sheet, allowing space for the cookies to spread. Bake at 375° for 10 to 15 minutes, or until lightly browned.

That cookie recipe with potato chips had me laughing. My 4 year DS loves reading the Amelia Bedelia books to himself every night before bed. In the latest one, that crazy AB bakes chocolate CHIP cookies (Cookies with potato chips in them). We laughed and laughed about it. I didn't really know there was such a thing!:p
 
My MIL makes potato chip cookies and they are to die for!! I'll see if I can get the receipe. I crush chips and put them on top of tuna casserole before baking. It adds a nice crunch and texture.
 
This is one of the easiest recipes I have ever seen and it's soooooo good.

Use a 9 x 13 pan, 3 cans of drained tuna, 2 cans of mushroom soup, and crushed potato chips.

Layer 2 cans tuna, crushed chips to cover (no set amount, I cover it so I can't see the tuna much) and cover with a can of soup. Then layer the rest of the tuna, more chips, and the other can of soup. Bake at 350 until golden brown on top, about 40 minutes.
