Recipe ideas - frozen dishes?

I just got a chest freezer and I am so excited. :banana: I would love to maybe make a couple of meals - casseroles, etc to freeze on the days I feel like being lazy. Anyone have any good recipes?
 
You may want to try food.com, and search for OAMC (once a month cooking). They have lots of freezable recipes. We have done meatloafs, spaghetti sauce and twice baked potatos in bulk to freeze and they all turned out pretty well.

When I make spaghetti sauce, I make the whole stock pot full and then just freeze in baggies with the amount needed for one meal. I also have beef tips and noodles and chili mac frozen in baggies. Baggies are not the most economical choice but they lay flat in the freezer saving space and thaw out rather quickly so I like it. If you want the recipes I am more than happy to share.
You can make enchiladas and lasagna ahead and freeze until you are ready to bake. Once a month cooking takes a whole 8 to 10 hour day. I can stay in the kitchen that long but don't like the clean up and dishes afterwards. I suggest you just make double meals until you have a stock in your freezer. Just make sure you keep a list of what is in the freezer and label everything. I love lazy no cook nights. I will also take the leftover stock/broth from a roast and any leftover meat, veggies, potatoes and freeze them too. It makes a good stew. I love my freezer. Can you tell?

Heeeeey :thumbsup2 I didn't know you were on here. Sorry just a fan of your site and was surprised to see you here for some reason. OP Tiffany does have some very good and easy recipes it would be a good idea to check out here blog.

I don't have any ideas but I do agree with a PP that said about using ziplock bags. Especially for chilli, stews, and soups. It's so easy to do individual portions, quicker to thaw, and doesn't leave all of my dishes in the freezer and none in the cupboards.

Another idea for freezing foods - freeze individual portions of bbq or sloppy joe or even taco meat in muffin tins. Then pop them out and store them in a ziplock. They heat up quick in the microwave and will make your teenage boy really happy to have a a great snack.
