We ate at CM's a couple of weeks ago. It was a pretty standard buffet with one section set up for children's favorites (think chicken strips/pizza/mac&cheese) and a good size layout of more adult food. There is a soup/salad/cheese/etc section to start off. The main course section includes several vegetables offerings, some fish, pasta and a carving station that offers either roast beef or turkey. For desert there is a large selection of sweets including ice cream (make your own sundae), cakes and various pastries.
The quality is acceptable. Not great but certainly OK given the main reason people eat there is for the character interaction. You'll get face time with 4-5 characters during your meal.
